monday morning


Time to make: PANCAKES! 


 No big deal here. Straight out tha box, add an egg and water. I added a lil cinnamon but couldn't taste it in the end. I do love a tiny pancake.


Some butta (shoulda been tropical vacation butter)...

 


... and this. A few days ago I simmered some pomegranate molasses (which I found disappointingly tart, but still workable) and brown sugar, then tossed in a diced peach and nectarine. I ate it over vanilla scones with rosewater glaze. Today I put it back in a saucepan over med-hi, added more sugar, and let it simmer while I cooked the pancakes. I served Josh first, and his was still very tart (sry pal)... so I added 1/4 more brown sugar to what was left in the saucepan, and I think mine was perfect. It reminded of those plastic tubes full of sour squeezy candy... but less sour, and less candy. And then:




Diced fresh peaches! I should have sprinkled on some extra cinnamon at this point but I was happy to eat it as shown. Fresh sweetened heavy cream would have been heavenly as well but I didn't want to run out for it. YOM!
